What Shapes the Taste of Your Coffee?

From the farm to the coffeehouse or your kitchen, here’s what makes every cup of coffee unique.

It all starts at origin

Coffee is a journey that begins far before it reaches our cup. Grown within the Coffee Belt—an equatorial stretch rich with tropical rain, sun-dappled mountains, and fertile soil—each coffee carries the essence of its origin. We call this “terroir”, and it’s just the beginning of the story.

At Starbucks, we source only high-quality Arabica beans from over 25 countries across Latin America, Africa, and Asia Pacific. Each region brings something distinct to the cup: Latin American coffees often offer cocoa and toasted nut notes; East African beans shine with citrus and floral aromas; and Sumatran coffees deliver earthy, spicy richness. These flavor profiles are shaped not only by geography, but the craft that farmers have spent generations perfecting.

Healthy soil is essential to great coffee. Rich in organic matter, it gives coffee trees the nutrients they need to thrive—resulting in better cherries and more vibrant, complex flavors in every sip. That’s why Starbucks has invested in 10 Farmer Support Centers around the world, where our agronomists work side by side with farmers, sharing research and best practices to help improve both quality and sustainability.

At Starbucks, we don’t just honor terroir—we highlight it. We've learned that culture, geography, tradition, and time all leave their mark on flavor.

First choices, lasting impact

Once the cherries are handpicked at their peak, the journey continues with a decision: how to separate the seeds (which will become coffee "beans") from the coffee cherries.

In some places, coffee is washed, separating the fruit from the bean with water to create a clean, crisp cup. In others, beans are left to dry inside the fruit—a natural process that brings out sweetness and complexity. These choices aren’t accidental. They’re made by farmers who know their land and listen to their environment.

After processing, every bean is tasted. Our quality teams—whether in origin countries or back at our tasting rooms in Seattle—evaluate flavor, texture, and body, ensuring each coffee reflects its full potential.

Roasting & blending: Crafting character

Great coffee doesn’t always reveal itself immediately. It takes heat. Time. Patience.

Our master roasters decode the unique story inside every bean and roast accordingly—adjusting temperature curves and timing to coax out everything the harvest has to offer.

Some coffees are offered as single origin—an unfiltered expression of a specific place. Others are blended, artfully layered like a song—soft with balance, rich with harmony.

Brewing: Where the journey becomes yours

Flavor reaches its final form in the hands of our baristas—or you. Whether it’s a pour-over or a shot of espresso, the way coffee is brewed brings forward different notes. A pour-over may highlight delicate floral tones. Cold brew coaxes out chocolate and sweetness. Espresso pulls it all into an intensely concentrated moment.

And then comes the first sip. That’s when everything comes together—the origin, the care, the craft.
